Matt has kindly provided his recipe for the Pakoras which he bought to the LETS New Year Party 2008 at Katy’s – thanks Matt!
Ingredients:
- Vegetable Oil
- 8 oz flour (chick pea)
- 1 onion
- 1 chilli
- 1 large potato
- Handful fresh coriander seeds
- 1 tsp garam masala
- 1 tsp curry powder
- 1 tsp cumin seeds
- Half tsp chilli powder
- Pinch of baking powder
- Salt to taste
Method:
Slice the potato and onion finely. Mix all ingredients together with enough water to make a batter consistency. Fry off spoonfuls of the mixture in the oil on medium heat and until golden.

LETS members who went to Katy’s New Year parties in 2008 and 2009 enjoyed a shared meal, some organic Mead from a Glastonbury farm and some Chai Tea (which Katy’s daughter Tasha made!) and a lovely warm and cosy woodburner! Due to popular demand Katy is letting you have the recipe for the Chai Tea below…
Ingredients:
- 4 teaspoons loose tea
- 1 piece dried or fresh ginger
- 3 crushed cardamon pods
- 3 whole cloves
- 1 cinnamon stick
- 2 cups milk
- 3 cups water
- sugar to tatse
Cooking Instructions:
Boil 3 cups of water in a pan and add the tea and spices. Simmer for a few minutes. Add 2 cups of milk and sugar to taste. Remove from the heat. Leave for 1 minute. Strain off the spices and drink! (You can vary the ratio of water and milk, and the amount of spices according to taste.)
